Gluten-free Easter cupcake - a simple recipe for a special holiday

Easter cupcake tradition

In many homes, we can't imagine Easter without the classic cupcake - whether it's yeast, sand, marble, or lemon. Its presence on the holiday table symbolizes prosperity, rebirth and the sweetness of life. Today, we are increasingly looking for healthier alternatives that do not lose any of their flavor - so here's our version gluten-free muffins, prepared on the basis of moncana gluten-free cake mix.


Ingredients for a cupcake (mold with a chimney, Ø 24 cm):

All ingredients should be at room temperature

  • 450 g cake mixes

  • 4 large eggs (yolks and whites separately)

  • 100 ml of lemon juice (approx. 2 lemons)

  • 260 g powdered cane sugar

  • 10 g sugar with vanilla

  • 1 and 1/4 cups of milk

  • 3/4 cup unscented oil

  • 1 large spoon and 1½ small teaspoons of baking powder

  • Peel grated from 2 lemons

  • A pinch of salt


Method of preparation:

  1. Prepare the mold: grease it with butter and dust it with gluten-free flour.

  2. Preheat the oven up to 180°C, heating up and down (2. level from the bottom).

  3. Beat the yolks with sugar, vanilla and lemon zest.

  4. Add milk, then oil - mix until combined.

  5. Pour in the Moncana mixture and mix briefly, just until combined.

  6. In a separate bowl, combine lemon juice and baking powder - wait until it foams and add to the batter.

  7. Whisk the egg whites with a pinch of salt stiff, then gently stir into the mixture.

  8. Pour the batter into the mold and bake for 1 h 15 min or until the stick is dry.

  9. Study with the oven tilted, and after 20 minutes remove from the mold.

  10. Sprinkle with powdered sugar or pour with lemon icing.


How to decorate an Easter cupcake?

If you want to add elegance and freshness to it - prepare a lemon icing:
Mix ¾ cup of powdered sugar with 2-3 tablespoons of lemon juice and pour it over the cooled babka.
