INGREDIENTS FOR GLUTEN-FREE DONUTS / TIRES
12 pieces
- 250 g gluten-free cake mix
- 50 g sugar or other sweetener
- 7 g dry yeast
- 2 eggs
- 20 g of oil
- 100 g of vegetable beverage
HOW TO MAKE GLUTEN-FREE TIRES:
- Mix flour, yeast and sweetener. Heat vegetable drink (it should be lukewarm, not hot) add oil, eggs and mix. Combine the flour with the liquid mixture and mix thoroughly for 2 -3 minutes. The dough will be runny at first, but will thicken as it is kneaded. Cover the kneaded dough and set aside to rise in a warm place for 30-40 minutes or until doubled in volume.
- Transfer the dough to a floured work surface and knead thoroughly. The dough will be a little sticky to your hands, but do not toss in flour more than necessary. Roll out the dough to a thickness of about 1-1.5cm, cut out circles, hole and set aside to rise again for about 15-20 minutes. In a pot, heat the fat for frying.
- Carefully drop the tires into the hot fat with the risen side down. Fry the rondelles on both sides over a low flame until golden brown (approx. 3 min). Wremove with a slotted spoon and drain excess fat on a paper towel. Dust with powdered sugar or decorate with icing after cooling.
- If you fancy a strawberry topping, blitz to a dusty approx. 8 tablespoons of sweetener and a large handful of freeze-dried strawberries, then add ok. 4 tablespoons of lemon juice and mix thoroughly. Note, it's more of a glaze than a frosting, it sticks more to your fingers, but it's delicious!
If you decide to make stuffed doughnuts from the dough, you need to adjust the frying time - it will definitely get a bit longer.
