Gluten-free carpatta recipe

Preparing gluten-free carpaccio requires precise selection of ingredients. The right proportions and the way it is made will result in a fluffy and light cake that is in no way inferior to the classic version. Before you start baking, it is a good idea to prepare all the ingredients so that the process goes smoothly. For baking, you will need two baking pans with the following dimensions 25x25 cm.

Ingredients for the dough:

Dough preparation, recipe:

  1. In a saucepan, boil water with butter.
  2. Pour rice flour and tapioca starch into the boiling mixture, stirring constantly.
  3. When the mixture comes together and forms a compact ball, remove it from the heat and let it cool down.
  4. Add baking powder to slightly cooled dough.
  5. Then, one at a time, beat in the eggs, each time mixing thoroughly. The entire blending process should take several minutes - this is the key to obtaining the characteristic mountains.
  6. Divide the dough into two parts and put them on baking sheets lined with baking paper.
  7. Bake at a temperature of 200°C for 30-35 minutes until golden.

Ingredients for pudding cream:

  • 600 ml of milk
  • 3 egg yolks
  • 50 g sugar
  • 50 g cornstarch
  • 200 g butter

Preparation of custard, gluten-free pudding:

  1. Pour 400 ml of milk into a saucepan, add sugar and bring to a boil.
  2. Mix the egg yolks and cornstarch in the remaining 200 ml of milk.
  3. Pour the mixture into the boiling milk and stir vigorously until the pudding thickens.
  4. Set the pudding aside to cool completely.
  5. Cream the butter until fluffy, gradually adding one tablespoon of pudding at a time.

Folding the carpe:

  1. Spread pudding cream on the first top of the baked cake.
  2. Cover with the second top and lightly press down.
  3. Sprinkle with powdered sugar before serving.
