Gluten-free apple pie on a crisp bottom - a simple recipe

Ingredients for gluten-free cake:
- 2 glass oat flour
- 1 glass quionoa flours
- 3 teaspoons of potato starch
- 2 teaspoons baking powder
- cube of butter
- 5 egg yolks
- 2 tablespoons of sugar or other sweetener
- vanilla flavouring
- 3 tablespoons of thick yogurt
Apple filling:
- 1 kg of apples
- 5 proteins
- 1/3 cup sugar
- 1 tbsp potato starch
- cinnamon
- optional 2 tablespoons of coconut shavings and 2 handfuls of crushed nuts

Preparation time: 30 minutes + baking 40-45 minutes

Gluten-free apple pie - how to make it
- Cut the cooled butter into cubes and combine with the rest of the dough ingredients, preferably using a food processor with a hook. Knead into a uniform dough.
- Divide the dough into two parts - the larger one (approx. 2/3) and smaller (approx. 1/3). Put both parts in the refrigerator or freezer to chill.
- Line a 30x24 cm baking tray with baking paper. Grate most of the dough and place in an oven preheated to 180°C, bake for about 15 minutes.
- Grate apples, squeeze out juice and mix with cinnamon. Layer the apples on the baked bottom. Optionally sprinkle with nuts.
- Whisk egg whites to stiff foam with sugar, at the end of whisking add potato starch. You can also add coconut shavings. Gently mix and spoon the foam over the apples.
- Grate the remaining dough on top.
- Bake the apple pie in an oven preheated to 180°C (top and bottom heat) for 25-30 minutes, until the pie is browned.
Best enjoyed warm with a scoop of your favorite ice cream.
