Zucchini cake with nutty flavor

Zucchini cake with nutty flavor
Ingredients:
- Zucchini - 2 medium-sized pieces (600 g)
- Powdered whole-wheat flour - 2 cups (280 g)
- Powdered rice flour - 1 cup (150 g)
- Eggs - 4 pieces (medium) Canola oil - glass (200 g)
- Bitter cocoa - 3 tablespoons (24 g)
- Chopped walnut - 4 tablespoons (40 g)
- Cane sugar - 1/2 cup (125 g)
- Baking powder - 2 teaspoons (8 g)
- Baking soda - half a teaspoon (2 g)
- Raisins (optional) - handful Salt - pinch

Advice from Beata:
Young zucchinis do not need to be peeled - wash, cut off the ends and grate them. Peel ripe zucchini, hollow out the seeds and grate them.
Smethod of preparation:
- Grate the zucchini on a coarse grater, then transfer to a colander and sprinkle lightly with salt so that the zucchini lets go of its juice.
- Beat eggs with sugar until fluffy (on high speed). Reduce speed and slowly add oil.
- Add the drained zucchini.
- Mix together all loose ingredients, then gradually combine with wet ingredients
- Important! The mass will be very thick.
- Line a 32x12 baking tin (a fruitcake pan) with baking paper, then pour the mixture into it.
- Preheat the oven to 175 degrees.
- Put the dough in a preheated (!) oven and bake ok. 1h to dry stick.
Important! Store zucchini cake wrapped in paper and foil.
