BANANA OAT BREAD
Ingredients:
- 150 g oat flour
- 80 g buckwheat flour
- 1 teaspoon of soda
- 1/2 teaspoons of baking powder
- 1/2 teaspoons of salt
- 3 medium bananas 320-350 g
- 2 eggs
- 90 g of honey
- 100 g of melted butter
- 60 g coconut shavings
- 50 g finely ground walnuts (not into flour)
Decoration:
- 1 banana
- 1 tbsp brown sugar
Preparation:
Preheat the oven to 180 degrees - top and bottom heat. Mix flours, baking soda, powder, nuts, chips and salt. Crush bananas with a fork (do not mix!). Add eggs, melted butter and honey, mix to combine. Add the wet to the dry, and stir with a wire whisk until combined. Spoon the dough into a 25x11 cm paper-lined fruit cake pan. Cut banana lengthwise and place on top, sprinkle with sugar.
Bake 1 hr until a dry stick. Stud on a griddle, cut cooled ones. You can vary the bread by adding cranberries, other nuts or finely chopped chocolate.
