- 120 g chickpea flour - 20 g rice flour - 190 ml of water - 1 egg - 80 g finely chopped red peppers - 80 g finely chopped onion or leek - 50 g of finely chopped broccoli - 1/8 teaspoon ground cumin - 1/2 teaspoon turmeric powder - 1/2 teaspoon salt - 1/4 teaspoon soda - 1/2 teaspoon cayenne pepper - 1/4 teaspoon ground ginger - Coconut oil to grease the waffle iron about 1 tablespoon
Preparation:
In a bowl, combine chickpea flour and rice flour, add water, egg and spices. Mix to combine to form a smooth dough without lumps. Add all the vegetables chopped. Preheat the waffle iron well, lightly grease it. Layer the batter with vegetables and bake for about 5 minutes until waffles are crispy and outside is crispy. Baking time depends on the juiciness of the vegetables. The vegetables should soften and the top of the waffle should be slightly crunchy. Cool the waffles on the griddle.
Tips:
They taste great with spicy hummus and cherry tomatoes. Waffles can be cut into smaller squares and served with spreads as mini sandwiches.
Based on this dough, you can fry pancakes in a frying pan.
Other vegetables - cauliflower, yam, beet - will be great for waffles
You can omit the egg by adding 1 tablespoon of flaxseed flour + 30 ml of water
